Executive Chef Thomas Pezeril, who recently joined Hélène Darroze from Villa La Coste, is responsible for the entire menu, from lunch to bistronomic dinner, including La Palmeraie, a Michelin-starred restaurant celebrating the terroir, seasonal produce and the estate's organic vegetable garden.
